Hobo Soup


1/2 quart chicken stock
1/2 quart beef stock
8 ounce can of lima beans
8 ounce can of pinto beans
8 ounce can of kidney beans
2 cups frozen okra
1/2 sliced onion
6 medium sized diced red potato
6 slices bacon diced
salt
black pepper

In a soup pot, fry bacon until it is cooked, but not too crispy. Remove bacon and set aside. Add onions to bacon grease and fry until translucent. Pour in beef and chicken stock along with potatoes. Reduce heat to medium. Cover and let cook for 25 minutes.

Give it a taste and add salt according to your personal tolerance.

Add okra. Drain water from beans. Add to soup. Let cook for 10 minutes.

Just before you serve it, add the bacon back into the soup. Season with salt and black pepper according to your preference and serve.
