Bacon Bits


This is best done in a microwave. Place the bacon on 5 layered paper towels and on top of a microwave safe plate. On a high setting, cook for about 8 minutes (depending on how powerful your microwave works) or until the bacon is slightly browned, but not burnt. Let sit on the counter for a few minutes to cool off. The bacon should be stiff and crispy. If not, cook again for another few minutes and then let cool.

Break up the bacon with your hands and place in a sealed plastic bag. This will keep for up to 3 days.

(If you do not have a microwave, use a broiler pan that has a drip tray so the bacon fat can be removed while cooking. Place the bacon strips on the top level of the pan leaving enough room between the strips. Put into the oven and set the temperature to 450 degrees Fahrenheit. Cook for about 8-10 minutes and follow the same steps as above.)
