Fried Dumplings [Johnny Cakes]


This makes a great bread to serve with saltfish and ackee. The outer biscuit it slightly greasy and hard while the inside is nice and chewy.

  • 4 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1/2 cup cold water
  • 1 cup coconut oil
  • Sift flour, baking powder, and salt into a bowl. Mix cool butter cutting it into the flour until mix is crumbly. Add water and mix gently until everything is moist and elastic. Knead gently in bowl 3-4 times. Let sit 5 minutes.

    Heat coconut oil over medium high heat in a frying pan until really hot.

    Roll and shape biscuits by hand (approx 1/4 inch tall and 2 inches across) and drop in pan. Flip over when bottom is golden brown. (Should take 1 minutes each side.) Remove biscuits from oil and drain on paper towels.
