Fruit Oat and Bran Muffins

This recipe for fruit oat bran muffins makes for a great breakfast and goes great with a hot coffee or a glass of milk. Makes about 12 muffins.

  • 1 cup of shredded wheat bran cereal
  • 1 cup of uncooked oatmeal
  • 1-1/2 cup milk
  • 1 extra large egg
  • 1/4 cup vegetable oil
  • 1/2 cups raisins
  • 1/2 cups finely shredded carrots
  • 1/4 cups dates
  • 1/4 cups finely chopped pecans
  • 1-1/4 cups all purpose flour
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • Preheat oven to 400 degrees.

    Mix bran cereal, oatmeal and milk in a bowl and let stand 5 minutes. In the meantime, beat egg with oil in a small bowl. Sift flour, baking powder, salt and sugar into a mixing bowl. Add egg/oil mix into cereal mixture and stir until all is moistened. Make a well in the center of the flour mixture in the mixing bowl and pour cereal mix in center. Mix all ingredients together beating with a low speed mixer. Stir in raisins, carrots, dates and pecans by hand.

    Place paper muffin cups into a muffin tray. Pour mix into each cup until 3/4 full. Put in oven and bake for 20-25 minutes.
